Here in Zambana, we’ve dedicated a festival to enjoy it in every way: whether in risotto or barley risotto, with egg sauce or gorgonzola, or shaved over carne salada carpaccio, its flavor enhances every dish.
During the festival, we organize field visits to show you how we cultivate and harvest it, show cooking, and tastings to teach you how to cook it and pair it with local wines.
We also share more about our community with photo exhibitions and guided tours of the nearby Zambana Vecchia church, where we preserve our memories.
